THE BEANS
This micro lot from Sara Gutierrez’ farm, El Silencio, is a wild one. Sara began her journey into coffee production after finishing her Business Administration degree. Instead of migrating overseas to look for opportunity abroad, Sara developed her passion for coffee, following the path laid out by generations of coffee farmers before her.
We’ve been working with Sara for a while now, it’s been a treat to feature her harvests year after year. After experimenting together with new varietals and processes, today Sara grows five different varietals, including this Yellow Colombia bean which she ferments for 82 hours in the absence of oxygen (carbonic maceration), making for a crisp and bold coffee.
